If our son in Arizona adds his father's name on his auto policy as a 2nd driver for a few months and the 2nd driver gets into an accident, can the 2nd driver get sued?

Anyone can be sued. It would be up to the court system to determine who would be responsible for what. Typically, the owner of the vehicle would be primarily responsible; however, the driver of the car could be too. If the other party files a law suit, you should contact an attorney.
