I am thinking of letting my Aunt buy my car from me but I have to keep the note in my name for 6 months or so until she can arrange for her own financing. If the car is registered to me, and insured by me, but she drives it and gets into an accident will the car be covered? If not, can the vehicle be registered by me, but insured in her name?

Most insurance companies require that you have an insurance interest in the vehicle to be able to purchase a policy in your name. In other words, the policy holder would be the registered owner of the vehicle. However, some of our insurance companies will allow your aunt to buy an insurance policy in her name even though the vehicle is not registered to her. However you decide to insure the vehicle you will be legally liable since you are the registered owner.

You can shop for a new insurance policy here by getting a car insurance quote.
