If I borrow someone's vehicle to go on a trip, is there anyway I can insure that vehicle? So, if anything happens to it, I'm responsible (not the person from whom I borrowed the vehicle)?

No, normally there is not a way in which for you to insure the car to have primary insurance on the vehicle, the car owner's insurance would be primary and insurance that say you had on your own vehicle or a non-owner policy would be secondary.

The vehicle owner will be responsible for you or anyone else that they permit to use their car since as the owner they have vicarious liability. Their insurance as well would be primary since insurance follows a car first and driver second. Since you are only borrowing the car for a short period of time and do not have insurable interest you usually would not be able to get an insurance policy on it and the owner is liable for your actions in their car.

You may be able to get a non-owners policy that could help though in case the car owner's policy limits were exceeded. Non-owners policies can typically include Liability, Medical Payments, and Uninsured/Underinsured Motorist coverages.

Non owner policies generally do not include Comprehensive, Collision, towing reimbursement, or rental reimbursement coverage. A non-owners policy of a driver would be secondary to the insurance put on the vehicle by the owner. If you do not own a car nor is there a vehicle owned by anyone in your household that you could use to obtain insurance on than you may want to get a non-owners policy.

So if you are borrowing your friend's car then the car owner needs to make sure their insurance policy will cover you as a driver and that you do no need to be added as a driver to their policy since you are taking a trip in the vehicle. Remember the owner of the vehicle is ultimately held accountable for anyone who drives the vehicle.
