If my dad lives in South Carolina and I live in New Jersey, can he put a car in his name, on his insurance, and list me as a driver on his policy (if I don't live with him anymore)?

Your father can put a vehicle in his name. As a result, he can add that vehicle to his policy. As a resident of another household (and another state), you do not have to be listed on the policy as a driver. Non-household members should only be listed on someone else's policy as drivers, if they are going to be using the insured's vehicle with any kind of frequency or regularity. Otherwise, the non-resident should be covered to drive the vehicle in a 'one-time' situation. Now, it is a different story if you want your father to register the vehicle, add it to his policy, and have the vehicle stay at your residence. Many insurance companies will not vehicles from more than one household listed on a single policy. If this is going to be the case, it is your best bet to register and insure the vehicle yourself - especially since you and your father reside in different states.
