My car was totally demolished and then stolen to prevent prosecution and without the car, vandalism cannot be proven according to police. Do I still have to keep this vehicle insured? I live in Colorado.

If you had comprehensive coverage on your vehicle it will likely be covered for vandalism and for being stolen. To find out if you are covered and if you must continue to pay for your insurance speak with your insurance agent. Some companies may allow you to withhold insurance payments if it appears that the car may not be found or cancel your policy but before doing so speak with your insurance company to make sure this will not harm the coverage as it stands.
