I was rear-ended while riding my motorcycle by a driver with only minimum insurance coverage in Arizona. I had coverage on the bike through State Farm and full coverage on another car through Country Companies. The total value of my claim exceeded the coverage of the State Farm policy. Can I receive coverage through my Country Comp. policy even though the bike was not insured with them?

No, to the best of our knowledge you could not collect on your automobile's insurance policy through a different insurance provider for the damages exceeding your motorcycle insurance coverage.

You were paying State Farm for the bike to be covered and unfortunately the damage has exceeded your limits. Your car's insurance would not then be counted as excess coverage since you were not paying Country Companies premiums to insure your motorcycle.
