Normally if you allow a friend or relative that does not reside in your residence to borrow or use your vehicle on an infrequent basis then your insurance coverages will extend to them and thus the vehicle will be covered if they are in an accident.
Insurance company guidelines and terms of insurance policies can differ though so you should read over your policy as well as discuss the issue with your insurance agent to make sure your policy does not have exclusions for lending your car to your adult aged children when they come to visit you. Your agent should also be able to tell you which of your coverages are extended to those that you give permission to drive your car but who are not listed as a driver on the policy.
