If your wife's car is going to remain in New Jersey then NJ will likely require you to keep it registered and insured there. The New Jersey Motor Vehicle Commission could tell you for certain if the car must remain registered as a NJ vehicle. Since you will be in New Jersey for almost half of the year and want to keep your wife's car garaged there year round then an insurance company would normally require you to keep New Jersey insurance on it.
According to the New Jersey MVC and Department of Banking and Insurance if you take your vehicle off the road because it is not operational or you are not using it, you must surrender your license plates to the New Jersey MVC in order not to be required to have insurance coverage in place. So if you plan to take insurance off this vehicle during your time in Florida you would need to surrender your NJ plates and then get them back once you return to NJ and place insurance back on the vehicle. Or you may want to protect your car by having continual insurance on it year round.
