You can continue to keep your NY policy if it is temporary situation.
The Florida Department of Highway Safety and Motor Vehicles states that any person who has a vehicle in Florida for more than 90 days during a 365-day period must purchase personal injury protection (PIP) and property damage liability insurance coverage. The 90 days do not have to be consecutive.
Thus as a college student from New York if you keep your NY insurance you will still need to make sure that you also have these coverages required by the state of Florida. So it likely would be more affordable to register and insure your vehicle in Florida since you could not only just place Florida insurance on the car and since NYS does not accept out of state auto insurance on New York registered vehicles.

Insurance companies’ guidelines differ but most will allow you to get insurance on your Florida registered vehicle without having a Florida license. It is understood there are situations in which you will have a car registered in Florida but carry an out of state driver's license. These situations could include such circumstances as a college student who has brought a car to Florida or bought a car in FL but has a license from their home state.
