In Nevada instruction permits are valid for one year. If your permit has expired, you must apply for renewal in person at a DMV office and a parent/guardian must sign another Financial Responsibility Statement. If the permit is expired more than 30 days, you will have to take the written test again.
Minors must remain free of any at-fault accidents, moving violation convictions and any type of alcohol or drug conviction for six months prior to receiving a driver license.
The NV Department of Motor Vehicles can require testing, cancel a permit or deny the renewal if the applicant has been convicted of traffic violations or other offenses listed under license suspensions and revocations.
You may drive only with a licensed driver, 21 years or older, with at least one year of driving experience seated next to you at all times. It would appear it is this restriction that you want to go against since your appointment for taking the skills test to get your license is 6 weeks out.
The Nevada driver's handbook speaks about the permit restrictions but not state what the penalties are. It may be that you will cited for driving without a license or that you will be required to hold the permit longer, you will need to contact the NV DMV to directly to find out the penalties for driving against the restrictions placed on a permit holder.
