What does an APV mean on your insurance policy?

APV in general refers to an all purpose vehicle,it could be a mini-van of some sort. So APV is a categorization for a vehicle. If this is not how APV is mentioned in your policy, as the type of vehicle you have, then you should check with your insurance agent to see what your specific insurance provider uses the initials or term APV for in your policy.
