No, Uninsured Motorist coverages would not cover your car being stolen. You would need Comprehensive coverage, a type of Physical Damage coverage, to cover your car being stolen.
There are two types of Uninsured Motorist (UM) coverage but neither covers a stolen vehicle. When most people talk about Uninsured Motorist coverages they are speaking of UM for Bodily Injuries (known as UM or UMBI). This type of coverage obvious would not be able to help you since it only cover injuries you sustained due to an uninsured motorist being at fault in an accident.
UMBI usually covers you, the insured members of your household and your passengers for bodily/personal injuries, damages or death caused by an at-fault uninsured or hit-and-run driver. If you are involved in an accident where the other driver is at fault but has no insurance, your policy will cover your medical expenses, up to the limit on your policy. Uninsured Motorist Bodily Injury does not cover your vehicle in anyway.
Uninsured Motorist Property Damage (UMPD) is the second type of UM coverage. UM Property Damage coverages cover your vehicle for damages it sustains due to an uninsured driver that is at fault. Your car is not covered for other acts, such as if you were at fault in an accident or other than collision (OTC) acts such as theft, vandalism or fire with UMPD.
So Uninsured Motorist Property Damage does covers your vehicle unlike UMBI but only for property damage to your car which sustained by an insured driver and that negligent operator does not possess insurance.
Your car being stolen does not fall under the coverages that Uninsured Motorist provides. You would need Comprehensive coverage which covers your vehicle for damage to your car if it is stolen; or damaged by flood, fire, or animals. It pays to fix your vehicle less the deductible you choose.
One may say that the thief was uninsured but it doesn't work that way for UMPD. Even if the thief was found and insured it is not like their insurance would pay for the stolen (or stolen and recovered) vehicle since the person stole it, which is a criminal act. Criminal acts and intentional accidents are not covered by an auto insurance policy.
