We live in a society where anybody can be sued for anything.
In general, though, if they do not claim you on their taxes and the vehicle you insure is not theirs, their assets should be safe. You are no longer a minor. And, since you are no longer a minor, and it is your vehicle, it is up to you to properly insure the vehicle (not your parents). Just living in your parents household should not make them accountable for your actions. (Unless they still claim you as a dependant on their taxes.)
